Recipe for Gizzdodo

Welcome to Cook Vibes.
A great choice for all Nigerian recipes.
The first recipe I'll be posting is the recipe for Gizzdodo.

Some call it Dodogizzard, some say it's Gizzards and Plantain.

Gizzdodo is gradually becoming a popular choice of food in Nigeria.

Its a nice variation for preparing plantain if you desire to eat plantain without the usual accompaniments.

The ingredients.
1. 450g-500g Gizzard
2. 2-3 ripe plaintains
3. Fresh Tomatoes
4. Onion
5. Chilli pepper
6. Seasoning cubes
7. Vegetable oil
8. Thyme and Curry
9. Salt
10. Fresh ginger (optional)
11. Lettuce and carrots. (Optional-for garnishing)

Blend the tomatoes, green peppers, chilli peppers, whole onion and ginger to a smooth paste.

Chop the gizzard into bite sizes and clean thoroughly.

Add gizzard into a small pot, add  chopped onions, curry and thyme, seasoning and water to cover the gizzard, boil on medium heat till tender.

Dice your plantain and set aside.

Pour one cooking spoon vegetable oil into a pot, place on medium heat.
When it’s hot, pour in another third of the chopped onions and fry till translucent.
Then add the blended pepper,  2 bullion cubes, rest of the curry powder, thyme, seasoning and salt to taste.

Leave to fry for 15 minutes thereabouts or until pepper dries up a bit and oil begins to settle on top.

Put some oil into a frying pan and fry the plantain till moderately brown.

Add stew to the gizzard and plantain then stir.
Leave to cook for 2 minutes then turn off the heat.

You could also-

Add the oil into a pan and place on heat

Put the cooked gizzard into the hot oil and stir for about one minute

Add the tomatoes and let it cook for 5 minutes

Add the onions, carrots, green pepper, ginger and chili pepper.

Season with the seasoning cube, curry and thyme.

Add salt to taste
Serve with the fried plantain, garnishing with lettuce and tomatoes.

Now, your Gizzdodo is ready.

You could take it as a snack, or as an accompaniment to your rice dishes like Jollofrice and White rice.

The next step is to share the recipe with friends so they don't miss out of the wonderful taste of Gizzdodo. 😍😉
